After making potato salad, I had a huge bowl of skins. I figured it would be a shame to throw these away, and why not try baking them into chips? The worst that could happen is the chip skins don’t taste good and get tossed out. To my surprise the chips turned out fantastic. My boyfriend said he likes the skin chips better than french fries. The skins did not turn out as crispy as I imagined, but they did have some crunch. I baked the chips in the oven at the same time as a rack of ribs, so the chips may have turned out crunchier if I had baked the chips by themselves.
Ingredients:
- Skin from 10 russet potatoes
- 2t Olive oil
- 1/4 t Salt
- 1/8 t pepper
- 1/8 t paprika
- 2 T Parmesan cheese
Preheat oven to 400 degrees.
Peel potatoes such that the skins contain a little bit of white potato flesh (about 1/8 inch). Place skins in a bowl, drizzle olive oil, and sprinkle with salt, pepper, and paprika to taste. Arrange skins in a single layer on a greased baking sheet. Bake for 30- 40 minutes. Turn the skins a few times during baking. When they are almost done, sprinkle Parmesan cheese on top and continue baking into cheese is melted.
