Ingredients
- 1 potato baked and cubed
- 2 T onion diced
- 1 t parsley
- 1/4 t chili powder
- 4 eggs
- 6 flour tortillas
- Cheese optional
- Salsa optional
Spray skillet with cooking spray. Over medium heat cook potato, onion, parsley, and chili powder until onions are translucent and potatoes are soft. Remove from heat.
In same skillet scramble eggs stirring constantly. When eggs are fluffy and no linger runny. Remove from heat and combine with potato mixture. Add cheese if desired.
Split mixture between 6 tortillas (about 1/3 c each). Add salsa if desired and fold into a burrito.
