In this recipe, I was trying to replicate the Peruvian dish lomo saltado, but I forgot to buy french fries. Despite the lack of potato, the dish turned out great: savory and flavorful.
Ingredients
- 1 pound beef cut into strips or chunks
- 1 small onion cut into strips
- 1 yellow chili pepper (aji amarillo)
- 1/2 bunch of parsley
- 3 tomatoes
- Salt and pepper to taste
- 1 T garlic
- 1T white vinegar
- 1T soy sauce
- 1T Worcesterstire sauce
In a large skillet, brown the beef over medium heat. Once the meat is browned remove from heat and transfer to a bowl.
In the same skillet, saute onions and garlic until onions are transparent. Add parsley, tomato, salt, pepper, vinegar, soy sauce, and Worcesterstire sauce. Stir and cover for 5 minutes.
Add beef back to skillet. Stir to combine. Cover and let simmer for 5 more minutes. Serve with rice.
