Tomato soup is one of the perfect soups for a cloudy overcast day. It goes really well with a grilled cheese sandwich or crusty bread.
Ingredients
- 1 onion chopped
- 3 carrots chopped
- 2 celery stalks chopped
- 1 anise bulb chopped
- 28 oz. crushed tomatoes
- 29 oz. tomato sauce
- 4 cups chicken broth
- 2 T Worcestershire Sauce
- 2 c Cream or Half-and-half
In a large stock pot combine all ingredients. Bring to a boil over medium heat. Once boiling, reduce heat and simmer for 20-30 minutes or until all the vegetables are soft.
Using an emersion blender, blend the soup until the chunks are smooth.
Add cream, stir and serve.
