I love boston baked beans. The sweetness and saltiness is the perfect complement any barbecued meat. These beans are a great option for a lower calorie bbq side because they omit the bacon and ham hack. However, despite the missing bacon, these beans taste great: not too sweet and slightly smokey.
Ingredients
- 2 c (1 lb.) dry small white beans or northern white beans
- 1-1/2 c diced onion
- 2 cloves minced garlic
- 1/2 c molasses
- 1/3 c ketchup
- 3 T brown sugar
- 3 T maple syrup
- 4 t dry mustard
- 1/4 c Worcestershire sauce
- 1 t paprika
- 1/2 t ground cloves
- 2 t liquid smoke
- 1/8 t red pepper (optional)
- 1 t salt
- 1/2 t pepper
- Purified Water
Soak beans overnight in a large bowl with 8 cups cold water. In the morning, drain and discard the water. The beans will be a little crunchy.
Place beans in a pot along with the remaining ingredients and 3-1/2 cups water. Bring to a boil. Turn heat to medium and simmer for 8-10 hours stirring occasionally. Note: this can also be done in a crock pot. The beans will turn brown as they absorb the sauce.
