This is a very fast, very easy meal to prepare.  It comes together in about 20 minutes.  All ingredients can either be prepared in advance and canned (i.e. vodka sauce) or you can purchase the items from the store.  I have yet to make my own pasta and my own vodka sauce.  Both are on my “to do” list.

The chicken and spinach in this recipe were frozen, so I had to simmer longer.  The spinach had been fresh spinach that I purchased but wasn’t able to eat fast enough.  Because I did not want to throw the spinach away, before the spinach “turned”, I placed the leaves  in a Ziplock freezer bag with one sheet of paper towel and squeezed out the extra air.  The spinach in this dish tasted the same as if I had used fresh spinach.

 

Ingredients:

  • 2 boneless skinless chicken breasts
  • 3 cups spinach
  • 1 jar Vodka Sauce
  • 1 package thin whole wheat spaghetti
  • Parmesan cheese

Put chicken spinach and vodka sauce in a sauce pan.  Bring to boil and turn down heat to low.  Simmer until chicken is no longer pink.  Remove chicken from sauce and shred it using two forks.  Return the chicken to the pot.

Prepare pasta as directed on the package.  In a separate pot, heat water.  When water is boiling add the pasta.  Once pasta is at desired softness, drain and rinse with cold water.

Serve with Parmesan cheese.

Makes 6 servings.
