Crunchy, creamy, savory, and sweet, this sandwich has it all. When I want to be really bad, I add more cheese, but there is enough cheese in the recipe to keep the sandwich stuck together. Sometime I use a sandwich maker to make a delicious “hot pocket”, and sometimes I simply use a skillet or griddle. The sandwich is just a glorious with either method.
Makes 4 sandwiches
Ingredients:
- 10 oz. chicken
- 1 T mayonnaise
- 1 T onion, finely chopped
- 1 T celery, chopped
- 2 T dried cranberries
- 2 T parmesan cheese
- 8 pieces of bread
- 8 slices Havarti cheese
- 1 granny smith apple thinly sliced
- Butter
Mix together chicken, mayonnaise, onion, celery, cranberries, and parmesan cheese.
Butter on side of each slice of bread. On the un-buttered side, layer Havarti cheese and apples: about ½ slice of cheese then about 1/8 of the apple then and other ½ a slice of cheese. Place ¼ of the chicken mixture on four of the slices. Finish the sandwich by placing a dressed bread slice on top of the chicken mixture.
Grill until the cheese is melted.
