Beets are an acquired taste. I did not like them as a kid, but now I love them. They are sweet and earthy and taste great in salads or alone. Fresh roasted beets are better than canned, so if you have decided you don’t like beets because you were given canned beets as a kid, then try them at least once. Yellow beets are a sweeter and less earthy than red beets.
- 2-3 red or yellow beets
Preheat oven to 350 degrees.
Wash beets thoroughly. Remove stems and tips.Wrap beets in foil and place on a baking sheet.
Bake for 60 minutes or until a fork easily punctures the beet.
Remove from oven and let cool. Once cool, remove the skin by gently rubbing. The skin should easily detach from the beet.
